comfort and goodness in 15 minutes: roasted tomatoes

Roasted Cherry Tomatoes

I made these fabulous roasted cherry tomatoes last night and they couldn't be simpler {or more delicious}. 

Simply toss some ripe cherry tomatoes with olive oil in a bowl, turn them out onto a baking sheet, season with kosher salt and freshly ground pepper and bake in a 400 degree oven for 15 minutes. 

Once they're done, sprinkle with a little more salt and some chopped fresh basil.  And you're done! 

Here are three ways to serve these yummies:

1. With crusty french bread.  Simply put the tomatoes in a bowl or plate in the middle of the table and let your guests spoon the tomato topping onto the bread for an awesome appetizer.  They will last about 5 minutes!

2.  As a side dish.  Last night I served these alongside roasted chicken and rice.  Okay, truth be told, Mark and I ate them straight off the baking sheet and they never actually made it to the table!  But, I was going to serve them with the chicken and rice!

3.  On top of cooked pasta.  I love cappellini, but good old spaghetti noodles would work too.  With some fresh grated parmesan on top...yum.  I may have to do this one tonight actually!  I'm already hungry!!

{PS Not all cherry tomatoes are created equal.  I've tried a few and my favorite is the Nature Sweet brand "cherubs".  They always seem super crisp and flavorful.  I buy them at Vons and I've seen them at Costco too}


  1. That is something I make, I always add garlic. Yep definitely great with some nice Italian bread and with chicken and we sometimes use it in a Ciabatta sandwich....mmmmmmm.
